When the Spanish arrived in Central America, they brought cacao back to Europe where it became a luxury item, enjoyed only by the wealthy. Over time, the Spanish empire lost its monopoly of the cacao supply and  production methods improved, making chocolate more widely available. Chocolate became a popular treat for people of all social classes and cacao drinks even served as fuel for long philosophical debates in European chocolate houses – sometime leading to revolutionary ideas.
The Industrial revolution ushered in new technology, including methods to grind cacao beans and separate the cocoa butter, which allowed for mass production of chocolate. Mass production reduced the price of chocolate and made it easier to transport without spoiling.
Today, many chocolates are still considered luxury items. It is often given as a gift to show appreciation, love, and thoughtfulness.
